“Engine drag control optional” is listed as an additional feature. What does “engine drag” refer to?

Engine drag control is not part of PTM. It's part of StabiliTrak and is used to prevent engine braking from destabilizing the car on slippery surfaces. You can defeat it if you turn off Stabilitrak completely.
